These delightful little cakes combine fluffy layers of chocolate cake with colorful sprinkles and creamy buttercream frosting, perfect for any Easter celebration.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Buttercream frosting (store-bought or homemade)
  • Decorative sprinkles or Easter-themed decorations

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour your mini cake pans.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, making sure each one is mixed in before adding the next. Stir in the vanilla extract.
  4. Combine the flour, cocoa powder, baking powder, and salt in a separate bowl. Gradually add this mixture to the wet ingredients, alternating with the milk, until a smooth batter forms.
  5. Pour the batter into the prepared mini cake pans and bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  6. Cool the cakes completely in the pans before transferring to a wire rack.
  7. Spread buttercream frosting between cake layers and on top of each mini cake.
  8. Decorate with sprinkles or Easter decorations.

Notes

For best results, make sure butter is at room temperature before creaming with sugar. Do not skip the cooling step to avoid melting the frosting.
