9 oz ground pork
2 spring onions, finely chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon Shaoxing wine or dry sherry
1 teaspoon sugar
1/2 teaspoon white pepper
1/2 cup napa cabbage, finely shredded
1 tablespoon cornstarch
24 round dumpling wrappers (gyoza or wonton wrappers)
Water for sealing
Cooking spray or vegetable oil
4 tablespoons chili oil, store-bought or homemade
1 tablespoon soy sauce
1 teaspoon black vinegar or rice vinegar
1 teaspoon toasted sesame seeds
1 teaspoon finely chopped spring onion, optional
Instructions
Prepare the filling: In a mixing bowl, combine ground pork, spring onions, garlic, ginger, soy sauce, sesame oil, Shaoxing wine, sugar, white pepper, napa cabbage, and cornstarch. Mix until well combined and slightly sticky.
Assemble the dumplings: Place a dumpling wrapper in your palm. Spoon approximately 1 teaspoon of filling into the center. Dip your finger in water and moisten the edge of the wrapper. Fold in half and pinch edges to seal, pleating if desired.
Complete dumpling preparation: Repeat the assembly process with remaining wrappers and filling. Cover completed dumplings with a damp cloth to prevent drying.
Preheat the air fryer: Preheat air fryer to 375°F for 3 minutes.
Prepare dumplings for cooking: Lightly spray or brush dumplings with oil. Arrange in a single layer in the air fryer basket.
Air fry the dumplings: Air fry for 8 to 10 minutes, turning halfway through, until golden and crispy.
Prepare chili oil dipping sauce: While dumplings cook, mix chili oil, soy sauce, black vinegar, sesame seeds, and spring onion in a small bowl.
Serve: Transfer hot dumplings to a serving plate and serve with chili oil on the side.
Notes
Ensure dumplings are sealed well to prevent leakage during cooking.
