- 2 sheets refrigerated pie crust, thawed
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon all-purpose flour
- 1 egg, beaten (for egg wash)
- 2 tablespoons milk (for egg wash)
- 2 tablespoons coarse sugar (for sprinkling)
- Preheat air fryer to 350°F (175°C).
- In a medium bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, and flour. Mix until apples are evenly coated.
- Roll out the pie crust sheets and cut into 4- to 5-inch circles using a round cutter or bowl.
- Spoon 1–2 tablespoons of apple filling into the center of each crust circle.
- Fold the crust over to form a half-moon shape and press the edges together with a fork to seal.
- In a small bowl, whisk egg and milk together to create the egg wash. Brush over each pie.
- Sprinkle tops with coarse sugar.
- Place pies in a single layer in the air fryer basket (work in batches if needed).
- Air fry for 8–10 minutes, or until golden brown and crispy.
- Let cool slightly before serving—filling will be hot!
