  • 2 sheets refrigerated pie crust, thawed
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons milk (for egg wash)
  • 2 tablespoons coarse sugar (for sprinkling)

Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. In a medium bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, and flour. Mix until apples are evenly coated.
  3. Roll out the pie crust sheets and cut into 4- to 5-inch circles using a round cutter or bowl.
  4. Spoon 1–2 tablespoons of apple filling into the center of each crust circle.
  5. Fold the crust over to form a half-moon shape and press the edges together with a fork to seal.
  6. In a small bowl, whisk egg and milk together to create the egg wash. Brush over each pie.
  7. Sprinkle tops with coarse sugar.
  8. Place pies in a single layer in the air fryer basket (work in batches if needed).
  9. Air fry for 8–10 minutes, or until golden brown and crispy.
  10. Let cool slightly before serving—filling will be hot!
