Crispy and flavorful air fryer zucchini chips, a healthy snack that combines fresh zucchini with Parmesan and seasonings for an irresistible crunch.

Ingredients

  • 2 medium zucchini
  • 1 large egg
  • 1 Tbsp. milk (oat, cashew, or soy)
  • ½ cup plain Italian seasoned breadcrumbs
  • ⅓ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Slice the zucchini into ¼-inch rounds.
  2. Prepare the egg wash by whisking together egg and milk.
  3. Combine breadcrumbs, Parmesan cheese, salt, and pepper in another bowl.
  4. Dip zucchini slices in the egg wash, then coat them with the breadcrumb mixture.
  5. Arrange half of the coated slices in the air fryer basket, spray lightly with cooking spray.
  6. Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through.
  7. Serve immediately with your favorite dips or enjoy alone.

Notes

These chips can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat for best crispiness.
