Apple Cider Whoopie Pie Cookies are a delightful treat that combines the flavors of fall with a delicious caramel filling.

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter (for filling)
  • 1 cup brown sugar (for filling)
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Using a mixer, beat softened butter and brown sugar until light and fluffy.
  4. Mix in the eggs, apple cider, and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoon-sized balls of dough onto a lined baking sheet.
  7. Bake in the preheated oven for 12-15 minutes, or until edges turn golden brown.
  8. Melt butter in a saucepan, stir in brown sugar and heavy cream, and boil for 3-5 minutes. Remove from heat and mix in vanilla.
  9. Spread caramel filling onto one cookie and sandwich it with another cookie to serve.
