1/2 cup whole wheat flour
3/4 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract

1/4 tsp nutmeg
1/4 tsp salt
1 1/2 cups grated apples (about 2 medium apples)
1/2 cup chopped walnuts or pecans (optional)
1 tbsp lemon juice
2 tbsp melted butter (for greasing)
Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with melted butter or line it with parchment paper for easy removal.
Prepare the Apples: Peel and grate the apples, then toss them in a bowl with the lemon juice to prevent browning. You can use a box grater or a food processor for this step. Set aside.
Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt until well combined.
Combine Wet Ingredients: In a separate bowl, mix the Greek yogurt, granulated sugar, brown sugar, egg, and vanilla extract. Stir until smooth and the sugars are well incorporated.
Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.
Fold in Apples and Nuts: Gently fold in the grated apples and nuts (if using) until evenly distributed throughout the batter.
Pour Batter into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake the Loaf: Place the loaf pan in the preheated oven and bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil.
Cool and Serve: Once done, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer the loaf to a wire rack to cool completely before slicing.
