Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 medium apple (Granny Smith or Honeycrisp), peeled and diced small
  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • For the glaze: 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. In a small skillet over medium heat, melt 1 tablespoon butter. Add diced apple, brown sugar, and 1/2 tsp cinnamon. Cook for 5–7 minutes until tender and caramelized. Set aside to cool.
  2. In a mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined.
  4. Gently fold in the cooked apple mixture.
  5. Preheat and lightly grease your waffle iron. Spoon batter into each mold and cook for 3–4 minutes or until golden brown and cooked through. Transfer to a wire rack to cool slightly.
  6. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. Adjust thickness as needed.
  7. Once the waffle donuts are warm (not hot), dip the tops into the glaze or drizzle it over with a spoon. Let set before serving.

Notes

  • For a richer flavor, you can add a sprinkle of nutmeg to the batter.
  • Make sure not to overmix the batter to keep the donuts fluffy.
  • Store leftover waffles in an airtight container for up to 2 days.
