Avocado Toast with Egg is a delicious and creamy twist on the traditional toast, featuring a flavorful egg mixture combined with avocado, bacon, and seasoning.

Ingredients

  • 2 slices ciabatta bread (my favorite)
  • ½ medium avocado
  • 2 eggs, cooked and peeled
  • ¼ cup mayo
  • 2 tablespoons red onion, finely diced
  • 2 tablespoons bacon, cooked and finely chopped (more for garnish, turkey bacon can also be used)
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • sriracha to taste
  • dill for garnish

Instructions

  1. In a mixing bowl add eggs, mayo, red onion, bacon, paprika, garlic salt, black pepper and sriracha to taste. Give it a good mix with a fork.
  2. Slice 2 bread slices (toast them if you like), then mash ¼ of avocado on each bread slice using a fork.
  3. Now, add egg mixture over the top and garnish with crispy bacon and dill. Enjoy!

Notes

  • Feel free to adjust the amount of sriracha to suit your spice preference.
  • This recipe can be customized with different types of bread or additional toppings like tomatoes or sprouts.
