Instructions
Prepare the Dates: Carefully pit each Medjool date by making a small slit and removing the pit without splitting the date apart entirely to create a pocket for the filling.
Stuff the Dates: Using a small spoon or your fingers, fill each date with softened goat cheese, ensuring the filling is evenly distributed inside each date pocket.
Wrap with Bacon: Take each bacon half-slice and wrap it tightly around the stuffed date, securing the cheese inside. Place each wrapped date seam-side down on a baking sheet lined with parchment paper.
Bake: Preheat your oven to 400°F (200°C). Bake the bacon-wrapped dates on the middle rack for 15–20 minutes or until the bacon is crispy and caramelized, turning once halfway through if needed for even cooking.
