  • 1 pineapple, peeled, cored, and cut into bite-sized chunks
  • 1 pound bacon, each slice cut in half
  • 1 cup brown sugar
  • 1/4 cup hot sauce
  • 1/4 cup packed light brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 3/4 teaspoon cayenne pepper
  • 1 tablespoon pineapple juice

Instructions

  1. Preheat the oven to 400°F and line a large rimmed baking sheet with a rack.
  2. Wrap each slice of bacon around a chunk of pineapple, securing it with a toothpick.
  3. Make the glaze by whisking together brown sugar, hot sauce, soy sauce, grated ginger, cayenne pepper, and pineapple juice in a small bowl.
  4. Coat each bacon-wrapped pineapple piece in the brown sugar mixture and spoon the glaze over them.
  5. Bake in the oven for 25 to 30 minutes, or until the bacon is crispy and the sugar is caramelized.
  6. Cool for about 5 minutes and serve warm with toothpicks.

Notes

Using a rack helps the heat circulate around the bacon evenly for a crispier texture. Store leftovers in an airtight container in the fridge for up to 3 days.
