Baileys Buttercream Brownies are an irresistibly decadent treat featuring rich brownies topped with a creamy Baileys buttercream and silky ganache.

Ingredients

  • 1 box brownie mix plus required eggs, oil, and water as indicated on the box
  • ½ cup salted butter, softened
  • 2½ cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons Baileys Irish Cream
  • 3 to 4 tablespoons heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • ⅓ cup heavy whipping cream
  • 2 tablespoons Baileys Irish Cream

Instructions

  1. Preheat oven according to brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set aside.
  2. Prepare the brownies as directed on the package, substituting ¼ cup water with ¼ cup Baileys Irish Cream if desired. Pour batter into the prepared pan and bake accordingly. Remove and cool completely.
  3. In a mixing bowl, beat softened butter, vanilla extract, and sifted powdered sugar until combined. With mixer on low, slowly add 2 tablespoons Baileys Irish Cream and continue beating. Add heavy cream one tablespoon at a time until frosting is fluffy and smooth.
  4. Evenly spread the buttercream over the cooled brownies using an offset spatula. Chill in the freezer while preparing ganache.
  5. Combine ⅓ cup heavy whipping cream with 2 tablespoons Baileys Irish Cream in a microwave-safe bowl. Heat for 45-60 seconds until just simmering. Pour hot cream over chocolate chips and let sit for 3 to 4 minutes, then stir until smooth.
  6. Spread ganache evenly over chilled buttercream layer. Allow to set on the countertop for 45-60 minutes or refrigerate for about 15 minutes.
  7. Lift brownies from pan using parchment paper flaps, cut into squares, and serve immediately.

Notes

  • For a stronger Baileys flavor, increase the amount of Baileys Irish Cream in the buttercream and ganache.
  • Store leftovers in an airtight container in the refrigerator.
