Delicious baked donuts filled with apple pie filling and coated in cinnamon sugar.

  • For Apple Pie Filling:
  • 1 1/4 cup diced gala apples (about 23 medium apples)
  • 1 ½ tbsp salted butter
  • 3 tbsp brown sugar
  • 1 tsp apple pie spice
  • 1 tbsp all purpose flour
  • For Donuts:
  • 1 ½ cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¾ cup brown sugar
  • 2 eggs
  • ¾ cup low fat buttermilk
  • 3 tbsp salted butter (melted)
  • 1 tsp vanilla extract
  • 1 tsp apple pie spice
  • For Cinnamon Sugar Topping:
  • ¼ cup white granulated sugar
  • 1 tbsp cinnamon
  • 2 tbsp salted butter (melted)

Instructions

  1. Prepare the Apple Pie Filling: Peel, core, and dice the apples.
  2. Heat a sauce pot over medium heat, add butter and sugar, and mix well.
  3. Add the diced apples and mix. Sprinkle in flour and apple pie spice; mix well.
  4. Cover and lower the heat to medium-low, cooking until apples are softened, stirring every few minutes. Let cool.
  5. Preheat the oven to 350℉ and grease a donut pan.
  6. In a large mixing bowl, whisk eggs, sugar, buttermilk, melted butter, and vanilla together until smooth.
  7. Sift in all dry ingredients and whisk until incorporated.
  8. Add the apple pie filling mixture and mix well with a spatula.
  9. Transfer the batter into a piping bag (use a pint glass for easier filling).
  10. Cut the tip off the piping bag and squeeze batter into the donut cups, filling almost all the way full.
  11. Bake for 11-12 minutes and let the donuts cool on a wire rack.
  12. For the Cinnamon Sugar Topping: Melt butter and mix sugar and cinnamon in a shallow bowl.
  13. Brush the top of each donut with melted butter and dip into the cinnamon sugar mixture. Repeat for all donuts.

Notes

  • Make sure the apple pie filling is not too hot when adding to the batter.
  • For an easier transfer to the piping bag, use a pint glass.
  • Donuts can be kept in an airtight container for several days.
