Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper for easy cleanup.
In a small bowl, mix together Boursin cheese, garlic, lemon zest, lemon juice, and half of the olive oil or melted butter. Stir until smooth and well combined.
Pat the salmon fillets dry with a paper towel. Drizzle the remaining olive oil over the fillets and season with salt and black pepper. Place the salmon fillets in the prepared baking dish, skin side down if using skin-on.
Spoon the Boursin cheese mixture evenly over each fillet. Spread it gently with the back of a spoon to cover the top of each piece.
Bake in the preheated oven for 15–20 minutes, depending on the thickness of your fillets. Salmon is done when it flakes easily with a fork and the internal temperature reaches 145°F (63°C).
Remove from the oven and let rest for 2 minutes. Garnish with chopped parsley and serve with fresh lemon wedges on the side.
