2 Honeycrisp apples, sliced
3 tablespoons salted butter
3 tablespoons maple syrup
1 sheet frozen puff pastry, thawed
1 wheel of brie (8–12 ounces)
2 tablespoons apple butter or fig preserves
1 beaten egg (for brushing)
Coarse sugar, for sprinkling
Fresh thyme (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
In a baking dish, combine the apple slices, butter, and maple syrup. Place the dish in the oven and roast for 25 minutes, or until the apples become soft and caramelized.
Lay the puff pastry flat on a parchment-lined baking sheet. Put the brie wheel in the center of the pastry. Remove a small portion of the rind from the top of the brie, keeping the rind intact on the bottom and sides. Spread apple butter or fig preserves over the top of the brie.
Fold the edges of the puff pastry up and over the brie, covering it entirely. Brush the pastry with the beaten egg and sprinkle with coarse sugar.
Place the pastry-wrapped brie in the oven and bake for 20-25 minutes, or until the puff pastry is golden brown and crisp.
Once baked, remove the brie from the oven and spoon the roasted apples on top. Garnish with fresh thyme, and serve with crackers or enjoy on its own.
Notes
For a unique flavor, try using different apple varieties.
