A lighter take on the classic mac and cheese, blending creamy cottage cheese and sharp cheddar for a deliciously comforting dish.

  • 8 ounces elbow macaroni
  • 1 tablespoon butter
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup full-fat cottage cheese
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes.
  4. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  5. Remove from heat and stir in the cheddar cheese, mozzarella cheese, cottage cheese, salt, pepper, garlic powder, onion powder, and paprika until the cheese is melted and smooth.
  6. Combine the cooked macaroni with the cheese sauce, then transfer to a baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  8. Let cool slightly before serving.

Notes

For a crunchy topping, mix panko with melted butter and add it before baking.
