Delicious and healthy banana oatmeal bars that are perfect for a snack or breakfast.

Ingredients

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 inch baking dish with parchment paper or grease it.
  3. Mash bananas in a bowl until smooth.
  4. Mix in nut butter, maple syrup, and vanilla extract until creamy.
  5. In another bowl, combine oats, cinnamon, and salt.
  6. Gradually add dry ingredients to wet mixture and mix until combined.
  7. Fold in chocolate chips.
  8. Spread batter in the prepared baking dish.
  9. Bake for 20-25 minutes until golden brown.
  10. Cool for 10 minutes, then lift out and cool completely before cutting.

Notes

  • Store leftover bars in an airtight container.
  • Bars can be frozen for longer storage.
