Ingredients

  • Grilled BBQ chicken (about 2 cups, shredded or sliced)
  • Cherry tomatoes (1 cup, halved)
  • Corn (1 cup, fresh or canned)
  • Black beans (1 cup, rinsed and drained)
  • Avocado (1 ripe, for the dressing)
  • Lime juice (from 1 lime)
  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)
  • Lettuce (about 6 cups, preferably romaine)

Instructions

  1. Grill the chicken: Start by grilling your chicken, coated with BBQ sauce, on medium heat for about 6-7 minutes on each side until cooked through. Let it cool before slicing.
  2. Mix the base: In a large bowl, toss together chopped lettuce, cherry tomatoes, corn, and black beans.
  3. Make the dressing: In a blender, combine avocado, lime juice, olive oil, salt, and pepper. Blend until smooth.
  4. Combine it all: Toss the salad ingredients in the bowl, add the sliced BBQ chicken on top, and drizzle with avocado dressing. Serve immediately.
