- 1 sheet puff pastry, defrosted
- 113 g cream cheese, room temperature
- 60 g powdered sugar
- 1 teaspoon vanilla extract
- 150 g fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 egg
- 1 tablespoon milk
- Powdered sugar, for sprinkling (optional)
- Turn your oven to 200°C and line your baking tray with parchment paper.
- In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- In another bowl, combine the blueberries with cornstarch and lemon juice.
- Dust a counter with flour and roll the puff pastry out to approximately 30×40 cm. Cut it into 8 pieces, each around 10×15 cm.
- Add a spoonful of the cream cheese mixture to the center of each pastry piece, followed by some blueberry mixture on top.
- Fold the edges of the pastry over the filling to form packets, pressing them down to seal.
- In a small bowl, whisk together the egg and milk then brush this mixture over the pastries.
- Place the pastries on the prepared tray and bake for 15–18 minutes until golden and puffed up.
- Transfer the pastries to a wire rack to cool slightly and sprinkle with powdered sugar before serving if desired.
Notes
- Make sure the cream cheese is at room temperature for easy mixing.
- You can substitute the blueberries with other berries if preferred.
- These pastries are best enjoyed fresh but can be stored in an airtight container for a day or two.
