A cozy and creamy chicken rice soup featuring crispy bacon and tender chicken, perfect for quick dinners or special occasions.

Ingredients

  • 2 cups shredded chicken (rotisserie or poached)
  • 6 strips smoked bacon
  • 1 cup long-grain rice (uncooked)
  • 1 cup heavy cream or half-and-half
  • 1 to 1 1/2 cups shredded cheese (cheddar or a blend)
  • 6 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/2 teaspoon smoked paprika
  • Optional: chopped chives or parsley for garnish

Instructions

  1. Cook the bacon until crispy. Remove and set aside.
  2. Sauté onion and garlic until fragrant.
  3. Add shredded chicken, rice, broth, and seasonings. Bring to a boil.
  4. Reduce heat and mix in cream and cheese until melted and combined.
