  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Toppings: Shredded cheese, sour cream, avocado, tortilla chips

Instructions

  1. Heat your skillet over medium heat. Brown the ground beef thoroughly, breaking it up as it cooks.
  2. Drain off any excess fat to keep the soup from being greasy.
  3. Add the diced onion and minced garlic into the skillet, sautéing for about 3-4 minutes until the onion becomes translucent and fragrant.
