A hearty, one-pot lasagna-inspired soup that combines browned meat, garlic, Italian herbs, broken lasagna noodles, and melty cheese.

Ingredients

  • 1 lb ground beef (or half beef, half Italian sausage)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Pinch red pepper flakes (optional)
  • 1 (28-oz) can crushed tomatoes
  • 4 cups low-sodium beef or chicken broth
  • 8 oz broken lasagna noodles (about half a box)
  • 1/2 cup grated parmesan, plus extra to serve
  • 1 cup shredded mozzarella, plus extra to serve
  • 2 tbsp tomato paste (optional for richer flavor)
  • Fresh basil or parsley for garnish

Instructions

  1. Heat the pot over medium-high and add a tablespoon of oil. Brown the meat until just cooked, about 5–7 minutes. Stir often so it doesn’t stick.
  2. Add onion and cook 3–4 minutes until translucent. Add garlic and sauté 30 seconds until fragrant.
  3. Stir in tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
  4. Pour in crushed tomatoes and broth. Scrape up browned bits from the bottom.
  5. Bring to a simmer, then add broken lasagna noodles. Reduce heat to maintain a gentle simmer.
  6. Cook uncovered 10–12 minutes, stirring occasionally, until noodles are tender. Don’t rush this step.
  7. Stir in parmesan and mozzarella until melted and creamy. Taste and adjust salt.
  8. Serve right away with extra cheese and fresh basil.

Notes

Browning the meat properly builds depth of flavor. Serve promptly as noodles will absorb liquid as it cools.
