  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • Fresh herbs (thyme, rosemary)
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 medium potatoes, quartered

Instructions

  1. Season the beef: Generously sprinkle salt and black pepper all over the beef chuck roast.
  2. Sauté onions and garlic: In a skillet, warm oil, then add onions and garlic. Sauté until golden, about 3 to 5 minutes.
  3. Prepare the slow cooker: Layer chopped carrots, celery, and potatoes at the bottom.
  4. Place the beef on vegetables: Lay the sautéed onions and garlic atop the veggies, then nestle the seasoned beef roast over this aromatic layer.
  5. Pour in the broth: Add beef broth and apple vinegar (if using). Tuck fresh herbs around the roast.
  6. Cover and cook: Secure the lid and set on low. Cook for about 480 minutes or until fork-tender.

Notes

For optimal flavor, do not skip browning the meat. Allow the roast to rest for 10-15 minutes before slicing.
