Instructions

  1. Preheat the oven: Set the oven to 350°F (175°C) and grease and flour your two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, combine the flour, sugar, cocoa powder, baking powder, and baking soda. Stir until everything is well mixed.
  3. Combine wet ingredients: Add the milk, vegetable oil, eggs, and vanilla extract. Mix until fully combined, but don’t overdo it—it should be a bit lumpy.
  4. Bake the cakes: Pour the batter evenly into the prepared cake pans. Bake for about 30-35 minutes. A toothpick inserted should come out clean.
  5. Cool the cakes: Let them cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  6. Prepare the cheesecake layer: Beat the softened cream cheese until smooth, then add sugar, eggs, and vanilla, mixing until creamy.
  7. Bake the cheesecake layer: Pour the cheesecake mixture into a greased 8-inch round pan and bake at 350°F for about 25-30 minutes, or until set in the center.
  8. Assemble the cake: Once everything is cooled, place one chocolate cake layer on a serving platter. Spread a layer of cheesecake on top, then add the second chocolate cake. Top with whipped topping and garnish with cherries. Serve and enjoy!
