2 cups cooked chicken breast, sliced or shredded
5 cups mixed salad greens
1 cup fresh blackberries
1/4 cup crumbled goat cheese or feta
1/4 cup toasted pecans or walnuts
1/4 red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Prepare the Dressing: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined to make the dressing.
Assemble the Salad: In a large salad bowl, layer the salad greens, cooked chicken, blackberries, goat cheese, nuts, and red onion.
Toss and Serve: Drizzle the dressing over the top and toss gently to combine. Serve immediately.
Notes
This salad is also great with grilled or rotisserie chicken.
Substitute blueberries or raspberries if blackberries are out of season.
For a dairy-free version, omit the cheese or use a dairy-free alternative.
