4 cups fresh or frozen blueberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla extract
Pinch of salt
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cut into cubes
1/4 cup boiling water
Optional topping: 1 tablespoon coarse sugar, for sprinkling
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, toss blueberries with sugar, lemon juice, cornstarch, vanilla, and a pinch of salt. Transfer the mixture into a buttered 9-inch baking dish.
In another bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Pour in boiling water and stir until just combined to form a dough.
Drop spoonfuls of dough over the blueberry mixture, covering most of the surface. Sprinkle with coarse sugar if desired.
Bake for 35–40 minutes, or until the topping is golden brown and the blueberry filling is bubbly.
Let cool for 10–15 minutes before serving. Delicious on its own or with a scoop of vanilla ice cream.
Notes
Store leftovers in the refrigerator for up to 3 days.
Serve with whipped cream or ice cream for an extra treat.
