Boston Baked Cod is an easy and delicious dish featuring cod fillets baked to perfection with a crispy panko topping.

Ingredients

  • 4 cod fillets (6 oz each), about 1 inch thick
  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Butter for greasing dish

Instructions

  1. Preheat oven to 400°F. Butter a 9×13 inch baking dish.
  2. Pat cod fillets completely dry and season both sides with salt and pepper.
  3. Arrange fish in prepared dish with space between pieces.
  4. Melt butter in small saucepan over medium heat until foaming, about 2 minutes.
  5. Remove from heat and stir in panko, parsley, garlic powder, and lemon zest until mixture resembles wet sand.
  6. Divide breadcrumb mixture evenly over fillets, pressing gently to adhere.
  7. Drizzle with lemon juice and olive oil.
  8. Bake 12-15 minutes until fish flakes easily and topping is golden brown.
  9. Let rest 2 minutes before serving.

Notes

  • Fish is done when internal temperature reaches 145°F
  • Don’t skip drying the fish—moisture prevents crispy topping
  • Thicker fillets need extra cooking time
  • Refrigerate leftovers up to 2 days. Reheat gently in 350°F oven to maintain texture.
  • Freezing not recommended as fish becomes watery.
