  • 1 pound firm white fish (such as cod or snapper), cut into chunks
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until translucent.
  2. Add the chopped bell pepper and cook for another 2-3 minutes until softened.
  3. Stir in the diced tomatoes, paprika, and cumin. Cook for about 5 minutes.
  4. Pour in the coconut milk and stir until combined. Bring it to a gentle simmer.
  5. Cook the fish chunks in the pot, season with salt and pepper, and let them simmer for 10-15 minutes until cooked through.
  6. Garnish with fresh cilantro before serving hot in bowls.

Notes

Using fresh fish enhances the flavor. You can also customize the stew by adding other vegetables like zucchini or carrots.
