Ingredients

  • 1 everything bagel
  • 2 large eggs
  • 2 slices cheddar cheese
  • 3 slices bacon
  • 1 tablespoon chopped chives
  • 1 teaspoon butter (optional)

Instructions

  1. Place bacon slices in a cold skillet. Cook over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Whisk eggs with a pinch of salt. Melt butter in a nonstick pan and cook eggs over medium-low heat, stirring gently until just set.
  3. Toast the bagel halves until golden. Optionally spread a little butter on the insides.
  4. Place cheddar slice on the bottom bagel half. Let the heat from the eggs help it melt.
  5. Spoon scrambled eggs onto the cheese, then add crispy bacon. Sprinkle with chopped chives.
  6. Top with the remaining bagel half, gently press, and serve immediately.

Notes

  • For a spicy kick, add a few slices of jalapeños.
