  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • Caramel candies, for filling
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, brown sugar, and granulated sugar until smooth and creamy, about 2-3 minutes.
  3. Mix in the egg and vanilla extract until well combined.
  4. Combine the flour, baking soda, salt, and ground cinnamon in another bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Shape dough into balls, flatten slightly, and place a caramel candy in the center before encasing it with more dough.
  7. Arrange the cookie balls on a parchment-lined baking sheet, spacing them properly.
  8. Sprinkle coarse sugar on top of each cookie before baking.
  9. Bake for 10-12 minutes or until golden brown on the edges.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
