2 cups cooked chicken, shredded
1 cup buffalo sauce
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1 cup cooked rice
1/2 cup ranch dressing
1/2 cup green onions, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup blue cheese crumbles (optional)
Instructions
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Stir in the cooked rice and half of the shredded cheddar cheese, mixing until everything is evenly coated.
Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
Top with the remaining cheddar cheese and blue cheese crumbles, if using.
Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions.
Notes
Feel free to adjust the spice level of the buffalo sauce to your preference.
This dish can be made ahead of time and stored in the refrigerator before baking.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
