2 large boneless skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 tablespoon Cajun seasoning
4 medium russet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup chopped green onions
1/2 cup sour cream
Instructions
Preheat oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with oil or nonstick spray.
In a large mixing bowl, toss potato cubes with olive oil, salt, black pepper, and smoked paprika. Spread evenly in the greased baking dish.
Place potatoes in the oven and roast for 20 minutes, stirring once halfway through for even browning.
While potatoes roast, combine chicken cubes with olive oil and Cajun seasoning in a bowl, mixing until all pieces are evenly coated.
Remove baking dish from oven after 20 minutes. Scatter seasoned chicken evenly over the partially cooked potatoes.
Return dish to the oven and bake for an additional 20 minutes, or until chicken is cooked through and potatoes are golden and tender.
Sprinkle shredded cheddar cheese and crumbled bacon over the baked casserole. Return to oven for 3 to 5 minutes until cheese is fully melted.
Remove from oven. Immediately top with chopped green onions and dollops of sour cream. Serve hot.

Ensure chicken is cooked through before serving.
