4 slices Texas toast
7 ounces cooked shrimp, Cajun-seasoned
1 cup shredded pepper jack cheese
2 tablespoons unsalted butter
1 tablespoon chopped green onions
Instructions
Sauté Cajun-seasoned shrimp in a skillet over medium heat until warmed through.
Place Texas toast slices on a work surface. Distribute shrimp evenly over two slices and top with shredded pepper jack cheese and chopped green onions.
Spread butter on the outer sides of each sandwich.
Preheat a skillet over medium heat and grill sandwiches until the bread is golden brown and cheese has melted, about 3–4 minutes per side.
Notes
For extra spice, consider adding hot sauce to the shrimp before placing them in the sandwich.
