  • 1 Tbsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups butter (softened)
  • 1 cup light brown sugar
  • ½ cup sugar
  • 2 eggs
  • 1 Tbsp vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1 apple (peeled and diced)
  • 10 oz caramel baking chips

Instructions

  1. Preheat your oven to 350°F.
  2. In a small bowl, mix the flour, cinnamon, baking soda, and salt; set aside.
  3. In a large bowl, cream together softened butter with sugars until light and fluffy.
  4. Beat in eggs and vanilla until well combined.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Stir in oats gently until incorporated.
  7. Coat diced apples with flour; fold into cookie dough along with caramel chips.
  8. Scoop dough onto baking sheets lined with parchment paper.
  9. Bake for 10-12 minutes or until edges are lightly browned. Cool on sheets before transferring to wire racks.
