Delicious, soft, and chewy cookies that combine the flavors of carrot cake with a creamy frosting.

  • 1 cup shredded carrots
  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until just combined.
  4. Whisk together the flour, oats, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the shredded carrots.
  7. Drop tablespoon-sized balls of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool completely before frosting with cream cheese frosting.

Notes

Make sure to soften your butter ahead of time for best results. Do not overmix to avoid tough cookies.
