3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 large eggs
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 teaspoon vanilla extract
2 cups finely grated carrots (fresh)
1/4 cup chopped walnuts or pecans (optional)
Powdered sugar (for dusting towel)
8 oz cream cheese, softened
4 tablespoons butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large mixing bowl, beat eggs, granulated sugar, and brown sugar until thick and light in color. Add vanilla and mix.
Fold in dry ingredients until just combined. Stir in grated carrots and nuts, if using.
Pour batter into prepared pan and spread evenly. Bake for 12–14 minutes, or until the cake springs back when touched.
While cake is baking, lay a clean kitchen towel on a flat surface and dust generously with powdered sugar.
Immediately after baking, carefully invert the hot cake onto the prepared towel. Peel off parchment paper and gently roll the cake (with the towel) starting from the short end. Cool completely.
For the filling, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and mix until creamy.
Once the cake is cool, unroll gently and spread the cream cheese filling evenly. Re-roll the cake (without towel).
Wrap in plastic wrap and refrigerate for at least 1 hour before slicing. Dust with powdered sugar before serving if desired.
Notes
Make sure to roll the cake while it is still warm to prevent cracking.
Optional nuts can be omitted if you prefer a nut-free version.
