  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 1 cup cashews, soaked
  • 1 cup vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions. Once al dente, drain and set aside.
  2. Sauté the onion and garlic in olive oil over medium heat until the onion is translucent, about 3-4 minutes.
  3. Add the diced chicken to the skillet, seasoning it with Cajun seasoning, salt, and pepper. Cook until golden and cooked through, about 5-7 minutes.
  4. Blend the soaked cashews with vegetable broth in a blender until smooth and creamy.
  5. Pour the cashew cream over the cooked chicken and stir well to combine. Heat through for a couple of minutes.
  6. Toss the cooked pasta into the skillet, mixing everything together until the pasta is coated in the sauce. Use reserved pasta water if needed.
  7. Plate the dish and garnish with fresh herbs like parsley or basil. Enjoy warm!
