  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup rainbow sprinkles
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 8 soft flour tortillas (8-inch)
  • 1/2 cup rainbow sprinkles, for garnish
  • 1/2 cup crushed crispy rice cereal or wafer cookies (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8-inch square baking pan with grease and parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk milk, melted butter, egg, and vanilla extract, then combine the wet and dry mixtures. Gently fold in rainbow sprinkles.
  3. Pour the batter into the prepared pan and bake for 18–20 minutes or until a toothpick comes out clean. Allow to cool completely.
  4. To make frosting, beat the softened butter until creamy. Gradually add powdered sugar, milk, vanilla extract, and salt until smooth and fluffy.
  5. Crumble the cooled cake into a bowl and add two-thirds of the frosting, mixing until it holds together.
  6. Lay out the tortillas and place a portion of the cake-frosting mixture in the center. Add more sprinkles and crushed cereal or cookies if using.
  7. Drizzle with remaining frosting, fold sides of tortillas inward, and roll tightly from the bottom.
  8. Slice in half and serve immediately or chill for 15 minutes before serving.

Notes

  • Feel free to adjust the quantity of sprinkles for more or less color.
  • Use gluten-free tortillas for a gluten-free option.
  • Store any leftovers in the refrigerator for up to 2 days.
