A delightful cheesy baked chicken dish featuring succulent chicken breasts topped with bell peppers and a blend of cheeses.

  • 4 boneless skinless chicken breasts
  • 2 bell peppers any color, thinly sliced
  • 1 small onion thinly sliced (optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or a mozzarella-cheddar blend
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven: Set oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season chicken: Place chicken breasts in the dish. Drizzle with 1 tbsp olive oil and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. Rub seasoning evenly on both sides.
  3. Add peppers and onions: Toss sliced peppers and onions with remaining 1 tbsp olive oil. Arrange them around and over the chicken.
  4. Bake: Bake uncovered for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  5. Add cheese: Sprinkle mozzarella and Parmesan over the chicken and peppers. Return to oven for 3–5 minutes, or until cheese is melted and bubbly.
  6. Serve hot: Garnish with parsley and serve with rice, pasta, or a side salad.

  • For added flavor, marinate the chicken with spices for a few hours before baking.
