4 medium potatoes, peeled and diced
1 cup shredded cheddar cheese
1 large onion, chopped
4 cups beef broth
2 cups milk

1 teaspoon paprika

Instructions
Brown the Beef: In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat.
Sauté Onions: Add chopped onions to the beef and cook until they become translucent.
Add Ham: Mix in diced ham and let it heat through for a couple of minutes.
Incorporate Potatoes: Add the diced potatoes and stir for a minute to combine with the meats.
Pour Broth: Pour in the beef broth, then season with garlic powder, paprika, salt, and pepper. Bring it to a simmer.
Cook the Potatoes: Allow the soup to cook until the potatoes are tender, approximately 15-20 minutes.
Make the Roux: In a separate small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden.
Add Milk: Gradually whisk in the milk until smooth and cook until slightly thickened (about 5 minutes).
Combine: Pour the roux mixture into the soup, stirring to combine and thicken.
Cheesy Finish: Remove the soup from heat and stir in the shredded cheese until melted and creamy.
Adjust Seasonings: Taste and adjust seasonings if needed.
