8 ounces pasta (penne or rotini)
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 ounces) diced tomatoes
1 cup beef broth
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups shredded cheddar cheese
1 cup sour cream
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 375°F (190°C).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat.
Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer and let cook for 5 minutes.
In a large bowl, combine the cooked pasta, beef mixture, cheddar cheese, and sour cream. Mix until well combined.
Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the top with grated Parmesan cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Garnish with fresh parsley before serving.
Notes
Feel free to use any type of pasta you prefer.
This dish can be easily customized with your favorite vegetables.
