A quick and delicious dinner idea featuring cheesy beef and pasta.

Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat.
  4. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer and let cook for 5 minutes.
  5. In a large bowl, combine the cooked pasta, beef mixture, cheddar cheese, and sour cream. Mix until well combined.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the top with grated Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Garnish with fresh parsley before serving.
