A delicious and creamy corn casserole that combines sweet corn with cream cheese and cheddar for a perfect side dish.

  • 2 cans (15 oz each) sweet corn, drained
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed buttery crackers (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, blend the softened cream cheese with sour cream, milk, sugar, garlic powder, onion powder, salt, and pepper until smooth.
  3. Fold in the drained sweet corn, ensuring it is thoroughly coated with the mixture.
  4. Transfer the corn mixture to a greased 9×13 inch baking dish and spread it evenly.
  5. Distribute the shredded cheddar cheese over the top of the corn layer.
  6. In a small bowl, mix crushed buttery crackers with the melted butter until well-coated, then evenly sprinkle over the cheddar layer.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
