- 450 g chicken breast, sliced into four pieces
- 1 teaspoon sea salt, or to taste
- 0.5 teaspoon freshly ground black pepper, or to taste
- 0.75 teaspoon paprika
- 1 teaspoon dried oregano
- 240 ml heavy cream
- 1 tablespoon cornstarch
- 3 garlic cloves, minced
- 115 g canned mild green chilies, drained
- 225 g shredded cheddar cheese
- 1 cup fresh spinach, chopped
- Preheat the oven to 200°C.
- Slice the chicken breast into four pieces and pound each to 1.5 cm thickness.
- In a small bowl, combine sea salt, black pepper, dried oregano, and paprika. Season both sides of the chicken breasts with the spice mixture.
- Place the seasoned chicken pieces in a 28 x 18 cm baking dish.
- In a measuring jug, whisk together heavy cream, cornstarch, minced garlic, and green chilies until the mixture is smooth.
- Pour the cream and chili mixture evenly over the chicken. Bake uncovered for 25 to 30 minutes.
- Remove the dish from the oven, scatter chopped spinach and shredded cheddar cheese over the chicken, and return to the oven.
- Bake for a further 10 minutes or until the cheese is fully melted and bubbling.
- Serve with pasta or rice as desired. Garnish with chopped Italian parsley and crushed red pepper if preferred.
