Cheesy Homemade Pizza Pockets are delicious and fun-to-make pocket-sized pizzas filled with gooey cheese and your favorite toppings.

Ingredients

  • 2 cups all-purpose flour, plus extra for dusting
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3⁄4 cup warm water (110°F/45°C)
  • 1 tbsp olive oil
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1⁄2 cup sliced pepperoni
  • 1⁄4 cup chopped bell peppers
  • 1⁄4 cup sliced black olives
  • 1⁄4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix the warm water, sugar, and yeast. Let stand for about 5 minutes, until the mixture becomes frothy.
  2. Add the flour, salt, and olive oil. Stir until the dough begins to pull away from the sides of the bowl.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat your oven to 425°F (220°C).
  6. Punch down the risen dough and divide it into 8 equal portions.
  7. Roll each portion into a circle about 6 inches in diameter on a floured surface.
  8. On each circle, spread about 1 1/2 tablespoons of pizza sauce, leaving a small border around the edge.
  9. Sprinkle a generous amount of mozzarella cheese over the sauce, along with some pepperoni slices, bell peppers, and olives.
  10. Fold the dough over the filling to create a semi-circle and press the edges firmly to seal, using a fork to crimp.
  11. Place the pizza pockets on a baking sheet lined with parchment paper.
  12. Brush each pocket with the beaten egg and sprinkle with Parmesan cheese.
  13. Bake for 15-20 minutes, or until golden brown and the cheese inside is bubbly.
  14. Remove from the oven and allow them to cool for a few minutes before serving.
