- 1 packet (2 1/4 tsp) active dry yeast
- 1 tsp sugar
- 1 tsp salt
- 3⁄4 cup warm water (110°F/45°C)
- 1 tbsp olive oil
- 1 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1⁄2 cup sliced pepperoni
- 1⁄4 cup chopped bell peppers
- 1⁄4 cup sliced black olives
- 1⁄4 cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- In a large bowl, mix the warm water, sugar, and yeast. Let stand for about 5 minutes, until the mixture becomes frothy.
- Add the flour, salt, and olive oil. Stir until the dough begins to pull away from the sides of the bowl.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat your oven to 425°F (220°C).
- Punch down the risen dough and divide it into 8 equal portions.
- Roll each portion into a circle about 6 inches in diameter on a floured surface.
- On each circle, spread about 1 1/2 tablespoons of pizza sauce, leaving a small border around the edge.
- Sprinkle a generous amount of mozzarella cheese over the sauce, along with some pepperoni slices, bell peppers, and olives.
- Fold the dough over the filling to create a semi-circle and press the edges firmly to seal, using a fork to crimp.
- Place the pizza pockets on a baking sheet lined with parchment paper.
- Brush each pocket with the beaten egg and sprinkle with Parmesan cheese.
- Bake for 15-20 minutes, or until golden brown and the cheese inside is bubbly.
- Remove from the oven and allow them to cool for a few minutes before serving.
