Indulge in delicious meatballs stuffed with gooey mozzarella, simmered in a creamy garlic sauce with baby potatoes.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 ounces mozzarella cheese, cut into cubes
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (for the sauce)
  • 3 cloves garlic, minced
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef, breadcrumbs, 1/4 cup Parmesan cheese, egg, garlic powder, salt, and pepper in a large mixing bowl.
  3. Shape small amounts of the mixture around cubes of mozzarella to form meatballs.
  4. Heat olive oil in an oven-safe skillet over medium heat and brown the meatballs.
  5. Add halved baby potatoes, stirring them with the meatballs.
  6. Mix heavy cream, minced garlic, and 1/2 cup Parmesan cheese in a separate bowl, then pour over meatballs and potatoes.
  7. Transfer the skillet to the oven and bake for about 20-25 minutes.
  8. Garnish with fresh parsley before serving.

Notes

You can prepare the meatballs a day in advance for deeper flavor. If you prefer a lighter option, use ground chicken or turkey.
