4 boneless, skinless chicken breasts
1 cup fresh or frozen pitted cherries
1/4 cup balsamic vinegar
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh thyme sprigs for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and pepper on both sides.
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 4 minutes per side, or until golden brown.
Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds.
Add cherries, balsamic vinegar, and honey to the skillet. Stir and cook for about 5 minutes, until the mixture thickens slightly.
Return the chicken to the skillet, spooning the cherry mixture over the top.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Once done, remove the skillet from the oven and let the chicken rest for a few minutes.
Garnish with fresh thyme sprigs if desired and serve warm.
Notes
Fresh cherries can be substituted with frozen cherries if they are out of season.
Serve the chicken with a side of roasted vegetables or mashed potatoes for a complete meal.
Adjust the amount of honey to your taste preference for sweetness.
If you prefer a thicker glaze, simmer the cherry mixture longer on the stove before returning the chicken to the skillet.
