¾ teaspoon pure vanilla extract
8 egg roll wrappers
21-ounce can of cherry pie filling
3 cups vegetable oil for frying

Instructions
In a mixing bowl, combine softened cream cheese, sugar, lemon zest, and vanilla extract. Use a handheld mixer to blend until smooth.
Pipe the cheesecake mixture onto an egg roll wrapper and top with cherries.
Seal the wrappers tightly by dampening edges before rolling them up.
Heat oil in a deep skillet to 330°F-340°F and fry the egg rolls until golden brown on both sides (about 1½ – 2 minutes per side).
Drain on paper towels and dust with powdered sugar if desired.
