A deliciously easy recipe for making Chicken Bacon Ranch Subs, featuring tender chicken, crispy bacon, sautéed vegetables, and melted cheese.

  • 900 g boneless, skinless chicken breast, thinly sliced
  • 680 g bacon
  • 3 bell peppers, thinly sliced
  • 1 sweet onion, thinly sliced
  • Sliced pepper jack cheese
  • 4 sub rolls
  • Ranch dressing, for serving
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat a griddle over medium-high heat. Cook the bacon until golden brown and crisp, reserving the rendered fat on the surface.
  2. While bacon cooks, season sliced chicken breast with salt and black pepper.
  3. Place seasoned chicken on the griddle using the reserved bacon fat. Cook for 3–4 minutes per side until each piece is golden and cooked through.
  4. Move cooked chicken to a cooler section of the griddle. Add sliced bell peppers and sweet onion to the griddle plate; sauté for 6–8 minutes until softened and caramelized.
  5. Combine chicken with sautéed vegetables. Top with crumbled bacon and arrange pepper jack cheese slices over the mixture, allowing the cheese to melt in the residual heat.
  6. Split sub rolls and place them on the griddle’s cooler area. Toast until lightly crisped.
  7. Fill each toasted roll with the warm chicken, vegetable, bacon, and cheese filling. Drizzle with ranch dressing before serving.
