3 cups cooked and shredded chicken breast
1 (15-ounce) can black beans, drained and rinsed
1 cup corn kernels (frozen or canned)
1 (10-ounce) can diced tomatoes with green chiles, drained
1 cup cooked rice
1 cup sour cream
1 (10-ounce) can cream of chicken soup
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 cups shredded Mexican blend cheese
6 large flour tortillas
Chopped cilantro and sliced green onions for garnish
Instructions
Preheat the oven to 375°F and grease a 9×13-inch baking dish.
In a large bowl, combine chicken, black beans, corn, diced tomatoes, rice, sour cream, cream of chicken soup, chili powder, cumin, garlic powder, and salt.
Place half of the tortillas in the baking dish. Spoon half of the chicken mixture over the tortillas and top with 1 cup of shredded cheese. Repeat with remaining ingredients.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
Let cool slightly, garnish with cilantro and green onions, and serve.
Notes
You can substitute Greek yogurt for sour cream or brown rice for a healthier option.
Serve with salsa, avocado, or hot sauce for added flavor.
