A delicious and easy one pan dinner featuring a comforting chicken cobbler topped with fluffy biscuit dough.

  • 120 millilitres unsalted butter, melted
  • 480 millilitres whole milk
  • 875 to 1000 grams shredded rotisserie chicken, mixed white and dark meat
  • 570 grams frozen mixed vegetables (corn, peas, carrots)
  • 322 grams Red Lobster Cheddar Bay Biscuit mix, including enclosed seasoning packet
  • 480 millilitres chicken stock
  • 298 grams canned cream of chicken soup
  • 2.5 millilitres seasoned salt
  • 2.5 millilitres garlic powder
  • 1.25 millilitres black pepper

Instructions

  1. Preheat oven to 175°C.
  2. Pour melted butter into a 33 x 23 centimetre baking dish and swirl to coat the entire base.
  3. Distribute the shredded rotisserie chicken evenly over the buttered base.
  4. Spread frozen mixed vegetables in an even layer over the chicken.
  5. In a large mixing bowl, whisk biscuit mix, seasoning packet, and whole milk until just combined.
  6. Pour the biscuit mixture gently over the vegetable layer, without mixing the layers.
  7. In the same bowl, combine chicken stock, cream of chicken soup, seasoned salt, garlic powder, and black pepper. Whisk until smooth.
  8. Carefully pour the soup mixture over the biscuit layer, ensuring layers remain undisturbed.
  9. Bake for 55–60 minutes until the crust is golden around the edges and liquids are bubbling.
  10. Allow to rest at room temperature for 10–15 minutes to permit the sauce to thicken prior to serving.

  • For a richer flavor, use homemade chicken stock instead of canned.
  • Feel free to customize the frozen vegetables based on your preference.
  • This dish can be prepared ahead of time and baked just before serving.
