Chicken Fajita Rice is a flavorful and colorful dish that combines sautéed chicken, bell peppers, onions, and spices with fluffy rice, perfect for a family meal.

  • 1 pound chicken breast, sliced
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken breast and season with chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes, or until the chicken is cooked through and no longer pink in the center.
  2. Add the sliced bell pepper and onion to the skillet. Sauté for an additional 3-4 minutes, or until the vegetables are tender and slightly caramelized. Stir in the minced garlic and cook for another minute until fragrant.
  3. In a large bowl, combine the cooked rice with the chicken and vegetable mixture. Toss gently to combine and ensure the rice is well-coated with the spices.
  4. Serve the chicken fajita rice in bowls, garnished with fresh cilantro and lime wedges on the side for squeezing over the top.
