1 pound chicken breast, sliced
1 tablespoon olive oil
1 bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
2 cups cooked rice
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Instructions
In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken breast and season with chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes, or until the chicken is cooked through and no longer pink in the center.
Add the sliced bell pepper and onion to the skillet. Sauté for an additional 3-4 minutes, or until the vegetables are tender and slightly caramelized. Stir in the minced garlic and cook for another minute until fragrant.
In a large bowl, combine the cooked rice with the chicken and vegetable mixture. Toss gently to combine and ensure the rice is well-coated with the spices.
Serve the chicken fajita rice in bowls, garnished with fresh cilantro and lime wedges on the side for squeezing over the top.
